Debbie's Dutch Salad
aka Mustard Pickles

Ingredients : 4 qts cucumbers; 4 qts onions; 4 qts green tomatoes; 4 qts summer cabbage. Peel, core, and cut and leave all of these in press overnight. Sprinkle about 1/3 cup coarse salt into the mixture.

Paste: Ingredients : 6 cups of vinegar, 6 cups of sugar, 4 tbsp mustard, 4 tbsp tumeric, 3/4 cup flour.
Dissolve vinegar and sugar and mix dry ingredients together. Take gravy shaker, put some vinegar and flour mixture in and shake until smooth. Repeat this routine until all of the vinegar and flour mixtures have been used.
Cook paste until almost boiling and thickening. Then pour over vegetable mixture (which has been drained ) Check paste for flavour. Add a bit more sugar or vinegar if necessary for preferred flavour. Simmer until vegetables start to soften; approximately one hour. *I simmer the mixture until everything is not totally soft - a bit crispy.
