Helen's Broccoli Casserole

Ingredients: 2 head of broccoli; 3 stalks of celery; 3 onions; any combination of 2 cans of cream of celery, mushroom, or chicken soup; milk; grated cheese; 1 red pepper; can of mushrooms; rice or swirl macaroni.

Clean and steam the 2 heads of broccoli until 3/4 done. Set aside.
Chop ( Fine ) 3 onions and 3 stalks of celery and saute together in frying pan.
Combine the celery and onions with the broccoli in a large bowl and add two cans of either cream of celery, mushroom, or chicken soup, or any two in combination. Add 3/4 cup of milk or water. Add 1 cup of grated cheese. Add pepper to taste.

Add one can of mushrooms and 1/2 chopped red pepper. (optional)

Add 2 cups cooked rice or 2 cups of swirl macaroni.

Bake in casserole dish at 350 for1 hour.

Grate cheese on top. May be frozen before baking. Allow extra time for thawing before baking.

 

Helen's Broccoli Salad

Ingredients: 1 head of broccoli; 3 carrots; 1/4 cup bacon bits; 1 red onion; 1/2 cup raisons.

Chop everything into small pieces, including the broccoli stems. Create a sauce consisting of 1 cup mayo, 1/2 cup sugar, and 2 tsp. of vinegar.

Mix and serve.
